# Directions:
01 - Bring a large pot of salted water to a rolling boil. Add the pasta and cook according to package directions until al dente. Drain the pasta, reserving approximately 0.5 cup of the starchy cooking water.
02 - While the pasta is cooking, heat the vegetable oil in a large skillet over medium heat. Add the finely chopped onion and sauté for 2-3 minutes until it becomes translucent.
03 - Incorporate the minced garlic, grated ginger, and sliced red chili (if using) into the skillet. Cook for an additional 1 minute until fragrant, being careful not to burn the garlic.
04 - Add the diced red bell pepper to the skillet. Sauté for 3-4 minutes until the pepper begins to soften slightly.
